Youngstown State vs. Kentucky Prediction & Matchup Preview

The Will Stein era officially begins Saturday afternoon when Kentucky hosts Youngstown State at Kroger Field. The Wildcats enter as 23.5-point favorites, but the Penguins arrive in Lexington with momentum after an impressive season-opening victory.

Youngstown State defeated Mercyhurst 43-10 on August 27, producing 484 total yards and scoring on its first five possessions. The Penguins also limited Mercyhurst to only 241 yards.

Kentucky will debut a completely new offensive identity under Stein, the former Oregon offensive coordinator. Kenny Minchey will make his first collegiate start after spending three seasons as a reserve at Notre Dame. Minchey has completed 23 of 29 career passes for 212 yards while also showing mobility with 96 rushing yards and two touchdowns.

Running back CJ Baxter could become another centerpiece of Kentucky’s offense. The former highly recruited Texas running back has battled injuries during his career but enters 2026 with an opportunity to establish himself as Kentucky’s primary back.

Youngstown State’s biggest threat is quarterback Beau Brungard, the reigning Walter Payton Award winner. Brungard was outstanding against Mercyhurst, completing 20 of 29 passes for 232 yards and three touchdowns while rushing for 119 yards and two more scores.

Kentucky’s defense must contain Brungard rather than simply overpower Youngstown State at the line of scrimmage. His combination of designed runs, scrambling ability and efficient passing makes him capable of extending drives.

Kentucky won the only previous meeting between the programs 31-0 in 2022. The Wildcats should again have the talent advantage, but Youngstown State is a dangerous FCS opponent capable of making Kentucky uncomfortable if turnovers become a factor.

Stein brings an aggressive offensive philosophy to Lexington, and Saturday provides an ideal opportunity to establish Minchey’s confidence before SEC competition begins.

Kentucky should give its new quarterback opportunities to attack downfield and operate the entire offense rather than simply protecting him with a conservative game plan.

Brungard carried 21 times for 119 yards against Mercyhurst and has repeatedly shown that his rushing ability is a central part of Youngstown State’s offense.

Against Kentucky’s superior defensive talent, scrambling may become even more important. Expect Youngstown State to use designed quarterback runs and read-option concepts.

Prop Bet #3: CJ Baxter Anytime Touchdown

Kentucky should spend considerable time in scoring territory as a 23.5-point favorite.

Baxter has the size and athleticism to become a major red-zone option, and the Wildcats should look to establish their running game early behind him.

Youngstown State already showed its offensive potential by scoring 43 points and gaining 484 yards against Mercyhurst.

Kentucky should also have opportunities to score quickly in Stein’s new offensive system. The over becomes particularly attractive if Brungard can lead Youngstown State to two or three touchdowns.

Players to Watch

Kenny Minchey — Kentucky: The Notre Dame transfer makes his first career start and begins a new offensive era in Lexington.

CJ Baxter — Kentucky: Talented transfer running back with an opportunity to become Kentucky’s primary rushing weapon.

Grant Godfrey — Kentucky: The linebacker steps into an expanded leadership role and will be important in containing Brungard.

Beau Brungard — Youngstown State: The reigning Walter Payton Award winner accounted for five touchdowns against Mercyhurst.

Jaden Gilbert — Youngstown State: Explosive running back who produced 89 rushing yards on only five carries in the opener.

Lynn Wyche-El — Youngstown State: Reliable receiver who caught six passes and scored a touchdown against Mercyhurst.

The Verdict

Prediction

Kentucky Wildcats 45, Youngstown State Penguins 20

Best Bets

Kentucky -23.5Over 62.5 Total Points Beau Brungard Over 49.5 Rushing Yards CJ Baxter Anytime Touchdown

Youngstown State is significantly more dangerous than a typical FCS opponent, particularly with Brungard controlling the offense. The Penguins should generate enough offense to make Kentucky work early.

Ultimately, Kentucky’s size, depth and overall athleticism should take over. Minchey gets a productive first start, Baxter helps establish the running game and the Wildcats pull away during the second half.

Prediction: Kentucky 45, Youngstown State 20.
